WE MADE IT TO 50 COUNTRIES GUYS!! WOOHOO! Nearly 5 months after starting the blog we have reached this milestone. I’m thankful to my followers on all platforms and everyone’s recipes and information I have been able to share. I can’t wait to see what the next 50 bring!
At #50 is Tanzania, a East African country that is bordered by Kenya, Uganda, Mozambique, Malawi, Zambia, Rwanda, Democratic Republic of the Congo, and Burundi. Wow that’s a lot of countries! This country is known for the famous Mount Kilimanjaro which stands at 19,341 ft tall making it the tallest mountain of Africa. Nearly every climate system can be found around this magnificent mountain which includes alpine desert, arctic, rain forest, heath, moorland, and cultivated land.
Currently Tanzania is home to 120 ethnic groups which have Asian and European roots. Beans, coconut, and plantains are the three primary staples in their traditional dishes. These ethnic groups influence the food found here including tonights dish.. curried fish. Tonight’s meal consisted of a curried fish stew-like concoction and a side, simple yet delicious side salad.
Both recipes were easy to prepare and paired well together. I used cod as my white fish, but I would have tried catfish if given the chance. It was refreshing to make a meal that consisted of less expensive items, many of which are staples in my home.
We loved how cilantro lightened the buttery curry and the salad was refreshing. This is definitely an easy and healthy weeknight meal. We rated it 7.25/10.
We are back the Caribbean baby! St Lucia is an island situated in the Caribbean Sea south of Martinique and north of St Vincent and the Grenadines. Although a small country it is full of various unique landscapes such as rainforests, coral reefs, mountains, a dormant volcano, and sandy beaches. St Lucia has also been known as Iyonola and Hewanorra which were names given by natives meaning island of the iguanas, but was renamed in the 16th century by the European settlers.
So I already had a hunch I would like this dish since we had made a coconut curry tuna dish for Tuvalu not too long ago. Although this is not the national dish, it is still a good representation of the country with common ingredients. Their cuisine is influenced by British, East Indian, and French cooking styles and flavors which can be seen in this dish.
There is a large variety of spices St Lucians use such as allspice, cinnamon, curry, and cloves and an even large variety of fruits that are native to the island. This dish has the wonderful pineapple which can easily elevate any dish in my opinion, especially when grilled! I used this recipe when preparing dinner.
As expected the dish was a hit and easy to prepare! I had marinated the chicken overnight to get the best flavor possible. The pineapple coconut rice was amazing (honestly what doesn’t coconut milk and pineapple make better)? The chicken was very flavorful and well seasoned. I would have liked to try the marinade on bone-in chicken that I would cook up in the Air Fryer. We rated this dish 8/10.
We are now over 40 countries, that is crazy! I have a little surprise for you once we hit 50 😉. Today we explore Zambia, a South African country famous for its safaris and the beautiful Victoria falls. It is considered one of the safer countries of Africa and has tons of opportunities for tourists to really explore the country and the protected wildlife by car, boat, foot, or jump.. Yes you can bungee jump off of the Victoria Falls Bridge which is 420 ft high! The wildlife is so crazy here that you can find termite mounds the size of small houses!
The meal I made today is a combination of “grilled” goat (I used beef), fried rape (I used red swiss chard), and n’shima (similar to grits or polenta). N’shima is considered to be the national food of Zambia due to the abundance of maize in the country. You can find n’shima served up with most meals accompanied with a relish, stew, or vegetables.
Rape leaves are a green also found in Zambia and are relatable to swiss chard. I used the suggested substitutions from this recipe. This dish was only seasoned with salt, however I decided to add a little chilli powder and mustard to give it more flavor.
The meat was similar with seasoning, once again only requiring salt. From learning from past dishes that this may not be enough to really allow the dish to shine I added a little cumin, coriander, and pepper after researching common spices in Zambian cooking. We thought overall it was a tasty meal thanks to the addition of spices. All of the components tasted good together and there was a mild heat from the chili powder and peppers. It is definitely a healthier dish than some of our other meals we have tried. We rated this dish 6.5/10 averaged between the two of us.
Next up we head to the Caribbean for a curry, pineapple, and coconut fusion😋
Welcome to the beautiful San Marino, another country I had no idea existed! This beautiful slice of heaven sits in northern-central Italy and has been a microstate since 301 A.D (self proclaimed oldest republic of the world). The main attraction of the country is the three peaks of Mount Titano. On each peak there is a tower: Guaita, Cesta, and Montale. The public is able to visit Guaita and Cesta by climbing the cobblestone steps overlooking the scenic countryside. That being said how come we don’t hear more about this country with it being one of the oldest countries of Europe?
When researching, it was clear I would enjoy the cuisine.. it sits inside the country where my favorite food originates! The dish I chose to represent San Marino is known as swallows nests or nidi di rondine in Italian. It got its name from the presentation of the food which closely resembles bird nests- lasagna noodles filled with cheese, prosciutto, bechamel sauce and basil leaves are rolled up and placed on top of marinara sauce.. is your mouth watering yet?
Just when I thought it couldn’t get better I discovered fontina cheese was part of the filling (my favorite cheese) and I decided to replace prosciutto with speck -can I get a hell yeah?! Alright I need to chill I’m making myself hungry! The recipe I used can be found here.
It was a pretty easy recipe just time consuming to cook the lasagna noodles. We thought a little more marinara sauce wouldn’t have hurt, but that is our only critique. It was a beautiful combination or melting cheese, warm sauces, and meat. They were surprisingly filling, but they did not last long in our fridge! If you’re looking for a way to elevate a pasta dish or just need something delicious to get you out of a boring dinner rut this is the recipe for you!
We rated this dish 9/10- higher with more sauce. Next we travel to Moldova to sip on some savory soup😎
Hey guys we are back in Africa this week visiting Uganda! Uganda is an Eastern African country that is made up of tall mountains and volcanos, unique wildlife and vast lakes including Lake Victoria at the southern border. This country is one of few that the equator passes through and can be “found” in Kayabwe, Uganda. If your feeling daring you can try fried grasshoppers as they are a delicacy here and are a sign of endearment.
The meal I chose represents multiple countries of Africa, but today it will shine for Uganda. A rolex is not only a watch, but a very tasty chapati wrap that is filled with marinated, grilled meat, omelet, and veggies. Chapati is a type a flatbread similar to a roti that is used is several different countries to hold or mixed in with savory dishes. The name rolex comes from the method the meal is made, rolled up egg “roll-eggs” . It was first created for college students as an affordable and portable meal, but soon became popular to everyone throughout Uganda.
I used a recipe that included a wonderful marinated meat, mbuzi choma, that had the whole apartment smelling amazing! You can find the meat recipe here. I did substitute the goat for pork since that was what I had on hand along with tortillas instead of chapati (sorry guys). I had fun making this dish and liked the minimal prep time needed. This could easily be eaten for any meal of the day or for a snack if desired.
This meal was damn good. It was not complicated by a long list of ingredients and fun to prepare (I have finally mastered making an omelet)! I think any marinated meat (or no meat) would work great here and there is a lot of room for creativity with what vegetables are mixed in. Bell peppers would be a great addition. The spice mixes are important to the dish and what make it Ugandan. Cilantro also shines in this dish giving the wrap a nice freshness.
Do yourself a favor and make yourself a rolex for breakfast, lunch, 3 am… there isn’t a bad time! We will definitely make this again and rated it 8.5/10.
Tālofa (hello)! Today we land in a little known country that is the definition of a tropical paradise. This gem of an island sits in the South Pacific Ocean and is no bigger than the LA airport! It has a population of roughly 11,000 over three main islands and six coral atolls (island with lagoon in center). It’s unique shape can sometimes allows you to view both shore lines at the same time, one looking into the lagoon and the other along the Pacific Ocean.
It looks so dreamy doesn’t it? Well, it’s actually the least visited country in the world! It is hard to believe with the beautiful beaches, tropical weather, and nonexistent crime. Life on the island is very much a communal style of living and often families will merge into one living in one large living space.
The meal I made for Tuvalu without a doubt screams island flavor. Most dishes here involve seafood and/or coconut due to the abundance. I thought it would be appropriate to make something that has both of these items along with a wonderful heat of ginger and curry powder. The recipe I used can be found here.
I am loving these simple meals! This is another great week night 30 minute meal that makes you feel like you are someplace in the Pacific Ocean (maybe Tuvalu?). If you do not like tuna I’m sure most fish would do well in the coconut curry sauce.
Our thoughts? Absolutely delicious! We loved the pairing of the coconut, curry, ginger, and garlic. The tuna went well with these flavors and I loved how easy it was to make. It was not a heavy meal which I appreciated and it was different from anything we have made to date on the blog.

Onto our 28th country- Bulgaria! This Balkan country is known for having the second richest natural mineral springs, producing 85% of the world’s rose oil, and bordering the Black Sea. Bulgaria is also one of the oldest European countries estimated to by established in 681 A.D. This country has Greek, Ottoman, Persian, and Slavic influence that definitely impacts their cooking style and flavors.
For Bulgaria I made two smaller dishes that worked well together and are very traditional to the country. The first part of this meal is kebapcheta a minced beef sausage that is well seasoned with paprika, cumin, and a little bit of clove. The name kebapcheta is derived from the word kebab, -che meaning small aka small kebab! Typically they are served as three with a side of chips (fries).
The traditional way to cook these little guys in on a grill, but I decided to put my new air fryer to use! 8 minutes later and some flipping mid way they were done!
The second part of the meal was shopska salata, an easy to assemble salad that is made up of the three colors of the Bulgarian flag (I accidently grabbed an orange pepper, silly me) – red, green, and white! Chopped cucumber, tomatoes, pepper, and onion are the base of the meal. Parsley and a good amount of feta is mixed throughout. Vinaigrettes are great to use as a dressing, but any light dressing will work!
Together it makes a beautiful spread! We thought the meat was well seasoned, the salad was refreshing and crisp, and the fries obviously did not take away from the meal. It was quick and simple so this is another great option for week night cooking. We rated it 7/10.
